First grind the ginger,garlic,cinnamon,cardamom,&cloves all together as a paste and keep aside
Now wash the chicken properly and add 4 tbsp of grinded ginger garlic paste,salt to taste, chilli powder, turmeric, curd mix it well and marinate it for sometime
Take a big pot and add oil n ghee on medium flame and add green chillies n saute well till the raw smell goes off
Now add cut onions in hot oil to make onions turns golden
Add salt and tomato saute well till evenly done add the marinated chicken into it and mix well let it cook in a medium flame
In the mean time take 2 cups of basmati rice wash it well wth running water and soak it for some time
By the time check whether the chicken has cooked well if it is done add 4 cups of water and bring it to boil and check for salt and chilli taste u can add little more if it is required.
Now add the soaked basmati rice into the boiling water and mix it well cover n cook on medium heat when the rice is half boiled at this stage the dum process is done.
Dum process: heat a old tawa place the briyani pot dum cook for 20 to 25 min on medium heat
After 20 min Open the lid and mix softly without breaking rice so that masala lying under will mix well with rice
Enjoy the lip smacking dum briyani with onion raitha
